Soak tamarind in hot water for 20 minutes and extract the pulp. keep aside.
Heat a pan, with 1 Tbsp of oil on medium-low flame, once the oil is hot, add mustard seeds, cumin seeds and fenugreek seeds. Allow it to sputter.
Add in chopped onion and sauté until the onion are translucent.
Add Ladies Finger pieces and sauté well in medium flame until it changes color and becomes non sticky.
Add tomatoes and sauté until they turn mushy. Now add turmeric powder, chilli powder and coriander powder. Mix together and sauté until raw smell of the spice powders go away.
Add the tamarind juice and add required amount of salt as per your taste. Mix and bring to boil.
Add a little water if needed and boil until ladies finger are well cooked.
Add jaggery and mix well until the jaggery dissolves. Garnish with Coriander leaves.
Serve hot with rice or roti.
