This Lamb and Vegetable Tray Bake is perfect for a simple yet satisfying lazy Sunday lunch! Its really quick and easy to prepare - then just leave the oven to do the rest while you go off for a brisk walk or whatever else takes your fancy!

Ingredients
  

  • ½ Leg of lamb about 800g
  • 4 cloves garlic
  • several sprigs fresh rosemary
  • 2 Tbsp rapeseed oil
  • salt & pepper
  • 3 medium potatoes
  • 2 medium sweet potatoes
  • 2 medium carrots
  • 1 red onion
  • 125 ml red wine

Method
 

  1. Preheat the oven to 190°C
  2. Peel the garlic and cut into thin slivers. Make about ten deep cuts into the flesh all over the lamb then push a sliver of garlic into each together with a sprig of rosemary.
  3. Put the joint into a medium sized roasting tray, pour the oil all over it and season.
  4. Just scrub the vegetables, then halve them and place around the joint. Turn them in the oil and scatter some more seasoning over them.
  5. Pour over the wine. Put into the oven for about an hour.
  6. Serve with the cooking jus poured over and with green vegetables of your choice.
