Lamb pilaf with apricots

This Lamb pilaf with apricots is a simple, tasty weekday meal and it's ready in under 30 minutes. It's not too spicy so children can haveĀ it too! Serve it with a side salad.

Ingredients
  

  • 400 g lamb boneless
  • 1 onion chopped
  • 2 cloves of garlic finely chopped
  • 1 Tbsp curry powder mild
  • 200 g of basmati rice
  • 400 ml chicken stock
  • 200 g chopped tomatoes
  • 8 pieces of dried apricots chopped
  • 2 Tbsp chopped parsley
  • 1 Tbsp chopped mint leaves
  • 1 Tbsp toasted pine nuts
  • 1 Tbsp oil

Method
 

  1. Cut the lamb into bite-sized chunks.
  2. In a heavy-bottomed saucepan, heat the oil. Fry the onion until soft, then add the garlic.
  3. Add the meat and curry powder and stir for about 1 minute.
  4. Add the rice and, after 1 minute of stirring, add the tomato and stock. Bring to the boil then add the apricots.
  5. Gently simmer under cover for about 20 minutes until the rice is tender. Add more stock if needed,
  6. Stir in the pine nuts and herbs, season to taste.
  7. Serve warm.
