Leftover turkey fried rice

This leftover turkey fried rice is perfect for using up roasted turkey (or chicken, duck etc ). It’s very easy to make and you can use other veggies if preferred (such as courgette, broad beans, savoy cabbage etc). For a more spicy version you can add ginger, cinnamon, chilli, turmeric, coriander powder and garam masala.

Ingredients
  

  • 1 onion
  • 2 cloves of garlic
  • 1 celery stalk
  • 1 carrot or 2 leftover roasted carrots
  • 1 tsp cumin powder
  • 1 tsp dried oregano
  • ½ tsp chilli flakes optional
  • 1 cup chicken stock or leftover gravy mixed with water
  • 1 large cup shredded roasted turkey meat
  • 1 handful curly kale
  • 1 cup green peas green beans or sprouts( cut in half)
  • 2 cups cooked basmati rice
  • 2 Tbsp sultanas optional
  • 1 Tbsp chopped parsley

Method
 

  1. Thinly slice the onion, chop the garlic, carrot and celery.
  2. Cook the rice, if you don't have any precooked leftover.
  3. Heat the oil in a large pan, add all the chopped veggies and gently sauté them for about 8 minutes, until soft and a bit brown.
  4. Add the spices, stir for a minute, then add the stock.
  5. Bring to the boil then cook for a couple of minutes, then add the greens and cook for 3 minutes or so, under a lid.
  6. Add the sultanas, if used, then stir in the turkey meat and warm through.
  7. Stir in the cooked rice and parsley leaves and combine well.
  8. Serve warm.
