Lemon and raisin ricotta fritters

These easy lemon and raisin ricotta fritters are lovely for breakfast, brunch or an afternoon snack. They have no added sugar, so they're ideal for the health-conscious. On the other hand, if you have a sweet tooth, eat them with some jam or honey!

Ingredients
  

  • 250 g ricotta cheese
  • 2 eggs lightly beaten
  • 50 g sifted flour
  • 20 g soft butter
  • 2 Tbsp raisins
  • 3 Tbsp grated lemon zest
  • vegetable oil for cooking
  • Icing sugar cinnamon or cocoa powder

Method
 

  1. Mix the ricotta with the flour, butter and eggs. Add the lemon zest and raisins - combine into a thick dough.
  2. If time allows, chill in the fridge for 30 minutes.
  3. Heat plenty of oil in a saucepan or wok. Drop spoonfuls of dough into the hot oil and fry them on each side till golden. Let them have random shapes!
  4. Drain the fritters on paper kitchen towels.
  5. Mix some icing sugar with cocoa powder or cinnamon and sift over the fritters before serving.
  6. Serve at room temperature.
