Put the flour, eggs, baking powder and vanilla essence in a blender. Pulse for a few seconds, then add half of the mango slices, oil and a some of the syrup from the tin. Pulse again. Add enough milk to have a thick, but pourable batter.
Heat the waffle maker. Once it’s hot, spoon in the batter and seal. Follow the machine instructions to cook the waffles - they should be golden brown and crispy on the outside, soft inside. You should be able to get 3 or 4 waffles from the mixture (depending on the size of your machine).
Meanwhile, put the remaining mango slices and syrup to a small pot. Bring to the boil and cook until you get a thick syrup around the fruit pieces. Add some honey and a drop of lime juice.
Serve the waffles with the mango compote.
