Maple glazed spare ribs

These maple glazed spare ribs are ideal for family meals,barbecues, parties and casual get-togethers. The ribs are gently simmered first with garlic, onion, chilli and aromatic spices, which can be done well ahead of time — even a day or two before serving. When you are ready to eat, simply coat them with the smoky maple glaze and bake, grill, air-fry or barbecue until browned and lightly sticky. The final cooking stage takes only around 15–20 minutes, making these ribs particularly convenient when entertaining. Serve them with rice, sweetcorn, a crispy salad or warm flatbread to soak up the delicious glaze.

Ingredients
  

  • 8 –12 pork spare ribs
  • 1 bay leaf
  • 1 garlic clove
  • 1 tsp caraway or cumin seeds
  • 1 tsp coriander seeds
  • 1 chilli pepper
  • 1 small onion
  • 1 tsp peppercorns
  • 1 tsp salt
  • For the glaze:
  • 1 tbsp tomato purée
  • 1 tsp olive oil
  • 1 tsp cider vinegar
  • 2 tbsp maple syrup
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • A pinch of cayenne pepper
  • ½ tsp cumin seeds
  • 1 tsp dried oregano

Method
 

  1. Place the pork ribs in a large saucepan or casserole and cover with water. Add the bay leaf, garlic, salt, peppercorns, onion, chilli, caraway or cumin seeds and coriander seeds.
  2. Bring to the boil, then reduce the heat and simmer gently for about 45 minutes. Alternatively, cook the ribs in a pressure cooker for 10–15 minutes under pressure.
  3. Remove the ribs from the cooking liquid and leave them to cool. Transfer to a plate or container, cover and refrigerate until you are ready to finish cooking them. They can be prepared a day or two ahead.
  4. To make the glaze, mix all the ingredients together in a small bowl.
  5. When ready to cook, generously brush the glaze over the ribs, coating them on all sides.
  6. Bake, grill, air-fry or barbecue the ribs until browned and lightly sticky. Depending on the cooking method, this should take around 15–20 minutes. Turn and brush with more glaze halfway through if needed.
  7. Serve warm with rice, sweetcorn, salad, flatbread or other side dishes of your choice.
