Marshmallow and raspberry Chocolate Mousse

I made this marshmallow and raspberry Chocolate Mousse with raspberry flavoured chocolate but you can use normal dark chocolate too, just make sure it’s good quality! It’s a super easy recipe, and the mousse is perfect for special occasions such as Mother’s day, Anniversaries or Valentine’s day.

Ingredients
  

  • 75 g dark chocolate 70% min
  • 75 g pink and white marshmallows
  • 1 pot double or whipping cream 220 ml
  • 100 g raspberries
  • 1 Tbsp muscovado sugar
  • To garnish: fresh raspberries and chocolate shaving

Method
 

  1. Break chocolate into small bits, then melt it over simmering water. Add half of the cream then the marshmallows. Stir until smooth, then let it rest.
  2. Crush the raspberries and sugar with a fork and spoon them into 4 small glasses or bowls.
  3. Whip the remaining cream until you get soft peaks, then fold it gently into the cooled chocolate mixture.
  4. Spoon the mousse on top of the crushed fruit then put the glasses in the fridge for about an hour.
  5. Just before serving, garnish the bowls with fresh raspberries and/or chocolate shavings.
