Mexican chicken skewers

These Mexican chicken skewers are perfect for parties, barbecues and informal get-togethers. If you don't want them to be too spicy, use smoked paprika instead of cayenne. Serve it wrapped in a tortilla or pita with salsa and guacamole!

Ingredients
  

  • 2 large chicken breast fillets
  • 3 Tbsp olive oil
  • 1 clove garlic minced
  • 1 tsp cayenne pepper
  • 1 tsp ground cumin
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 red onion
  • freshly squeezed lime juice

Method
 

  1. Remove the skin of the chicken then then cut into bite-sized chunks. Put these into a bowl and add the oil and spices. Marinate for about 30 minutes.
  2. Meanwhile soak 8 wooden skewers in water. Cut the peppers and into bite-sized slices. Peel the onion, cut into 8 wedges.
  3. Heat your BBQ, grill or griddle pan.
  4. Thread the chicken, pepper and onion pieces alternating onto the skewers. Brush the onion and pepper with the marinade then season with salt & pepper.
  5. Cook for 10-15 minutes, turning every couple of minutes. Be careful not to burn them - but they should be slightly charred and the chicken must be cooked through properly!
  6. Drizzle with lime juice just before serving.
