Mincemeat and walnut brownies

If you're after some delicious sweets during the Christmas period or you want to make some scrumptious edible gifts for your friends or family members - try out this recipe!  These mincemeat and walnut brownies have all the Christmassy flavours to put you in a festive mood. And they need hardly any effort to make.

Ingredients
  

  • 200 g of dark chocolate at least 70% cocoa solids
  • 250 g unrefined cane sugar
  • 250 g butter
  • 4 eggs
  • 200 g flour
  • ¼ tsp baking powder
  • 40 g cocoa powder
  • 100 g mincemeat
  • 1 tsp mixed spice or gingerbread spice mix
  • 100 g walnuts

Method
 

  1. Dry-fry the walnuts, cool, then chop them roughly.
  2. Chop the chocolate, then put into a saucepan with the butter and sugar and cook over low heat, stirring, until melted. Let it cool.
  3. Preheat the oven to 180°C.
  4. Lightly beat the eggs, add to the chocolate & butter mixture. Add the remaining ingredients, combine well.
  5. Grease a 22 x 22 cm (approx) baking tin and line the base with baking paper.
  6. Transfer the mixture into the tin spread it out evenly.
  7. Bake for about 25 minutes - it's done when it's just set (test with a skewer - the middle of the cake should remain a bit gooey & sticky).
  8. Allow the cake to cool in the tin, then turn it out onto a plate, carefully slice into 12 squares. Sprinkle with cocoa powder.
