Preheat the oven to 180°C.
Roll out the pastry.
Using a round cookie cutter or a drinking glass, cut out circles (about 8cm diameter).
Drop a small spoonful of mincemeat in the middle.
Wrap the mincemeat with the pastry creating ball shapes.
Put the balls on a baking tray lined with parchment paper - the even side facing upwards. Brush them with egg wash if you want the pastry shiny and crispy.
Bake for 10-12 minutes, or until light brown, then let them cool on a wire rack.
Roll them in icing sugar (you can mix in some cinnamon, if you like) and serve.
