Mint Coconut Chutney

It's summer time and I have some nice herbs growing in my kitchen window. The fresh mint leaves, with coconut and a few other ingredients, makes a refreshing chutney which can be eaten with dosa or idli.

Ingredients
  

  • ¼ Coconut grated
  • 1 cup Mint leaves, washed
  • 1 Tbsp Split black gram
  • 1 Green chilli
  • A pinch of tamarind pulp
  • Salt as required
  • ½ tsp Sugar
  • ½ tsp Oil
  • Seasoning:
  • 1 tsp Oil
  • 1 tsp Mustard seeds
  • 1 Dry red chilli

Method
 

  1. In a pan, roast split black gram in ½ tsp oil and set it aside.
  2. In the same pan, fry mint and green chilli and set aside.
  3. Grind coconut, roasted mint leaves and green chilli, roasted black gram, tamarind pulp, sugar and salt to a smooth paste.
  4. Heat 1tsp oil and add the ingredients under seasoning and let them splutter.
  5. Add this seasoning to the smooth paste.
