Mint pulao

Mint pulao is a delicious, aromatic and flavorful rice dish. It makes for a healthy lunch box dish, as the mint leaves contain a number of vitamins and minerals. It is very easy to prepare and yummy to taste. Fresh springs of mint leaves are ground to paste along with other spices and cooked with rice, which helps in retaining the fresh aroma of mint leaves. Ingredients
  

  • 2 cups biryani rice
  • 1 cup mint leaves
  • 1 cup fresh coriander leaves
  • 2 green chilly
  • 2 Tbsp oil
  • 2 bay leaves
  • 2 small cinnamon sticks
  • 3 cardamoms
  • 4 cloves
  • 1 Tbsp ginger garlic paste
  • 1 tsp lemon juice
  • 1 onion thinly sliced

Method
 

  1. Wash the rice and add water in 1:2 ratio. Keep aside.
  2. In a mixer, add mint, coriander leaves and green chilly.
  3. Add little water and grind it to a coarse paste.
  4. Pour oil in a wok and heat it on a medium flame.
  5. Add bay leaf, cinnamon, cardamom, cloves and sauté for a minute.
  6. Add onion and fry till translucent.
  7. Add ginger garlic, mint leaf paste.
  8. Fry them on a low flame for 5 mins.
  9. Add rice with water. Add salt and lime juice.
  10. Close with a lid and cook on low flame for about 15 to 20 minutes.
  11. When done remove from the flame and can be served with chips, curries or with chutney as accompaniments.
