Miso grilled asparagus

These Japanese-style  miso grilled asparagus go really well with grilled fish or can be served as a starter at a dinner party. Vegans can serve it with noodles or on a piece of toast. It only takes 10 minutes to make yet it’s a healthy, delicate and very tasty dish!

Ingredients
  

  • 1 Tbsp Mirin
  • 1 Tbsp white Miso
  • 1 tsp rice wine vinegar
  • 1-2 tsp sesame oil
  • 1 tsp Kikkoman soy sauce
  • 1 tsp freshly grated ginger
  • 1 tsp sesame seeds plus extra for garnish
  • 1 bunch asparagus
  • 2 spring onions
  • Lime juice

Method
 

  1. Turn on a griddle pan or cast iron grill.
  2. Mix the miso, rice wine vinegar, oil, soy sauce, ginger and sesame seeds in a shallow dish.
  3. Snap off the ends of the asparagus and discard. Place the asparagus in the marinade and coat them well.
  4. Chop the spring onions.
  5. Grill the asparagus, turning them occasionally, until charred and tender, brushing them with the marinade. This should take about 5 minutes.
  6. Chop the spring onions and mix them with the remaining marinade.
  7. Add these to the griddle pan for the last minute of cooking.
  8. Transfer the asparagus and spring onion bits to a plate. Squeeze over some lime juice, then top with more sesame seeds.
