Put the flour in a large bowl and add the egg and milk. Stir until well combined then rest for 10-15 minutes, if time allows.
Lightly oil a non-stick frying pan over medium heat. Add dollops of the batter to the pan then sprinkle them with mixed berries. Spoon a little more batter on top to cover the berries. Cook for a minute until the surface is no longer runny, then flip them over and cook for another minute or so.
When they are golden on both sides, transfer them to a plate and cover with foil. Repeat with remaining batter and mixed berries.
Meanwhile, put most of the berries in a small saucepan. Add the vanilla paste and sugar then place the saucepan on the hob over low heat and cook for about 8 minutes, stirring regularly, until you get a thick, syrupy compote.
Serve the pancakes with the compote drizzled over them.
