Mixed vegetable sandwich

A simple mixed vegetable sandwich with flavors of chutneys and sauces makes great breakfast or evening snack. You don’t require a grill, toaster or oven, I have used a pan to make it. Green chutney and tomato sauce with the vegetables to make for a tasty sandwich.

Ingredients
  

  • 4 bread slices brown or white bread
  • 2 tsp ghee
  • 1 carrot finely chopped
  • 1 small capsicum finely chopped
  • 1 tomato thinly sliced
  • 1 small onion finely chopped
  • 1 small piece of cabbage finely chopped
  • 1 tsp crushed pepper
  • Salt to taste
  • 2 Tbsp tomato sauce
  • 2 Tbsp green chutney
  • 1 Tbsp grated cheese
  • 2 tsp butter
  • For green chutney:
  • 1 cup equal portions of coriander and mint leaves
  • 1 Tbsp chickpeas
  • 1 tsp lemon juice
  • 1 green chilli
  • Salt to taste

Method
 

  1. To make green chutney, blend add all the ingredients mentioned for green chutney to a smooth paste. Keep aside.
  2. Heat oil in a pan and fry onions, then add all the vegetables except tomato, fry for a minute till the veggies are half cooked yet crunchy.
  3. Add pepper and salt, mix well.
  4. Next, smear the butter on the bread slice, then spread tomato sauce and green chutney.
  5. Layer tomatoes and vegetable mixture, grated cheese and cover with another bread slice.
  6. Place the bread slices on a pan under low flame, put ghee and cover with a lid.
  7. Toast them on both sides till they turn slightly brown. Cut the bread into half and serve.
