Melt the white chocolate over a bowl of hot water (double boiler method). Once melted, remove from heat.
Stir in the mascarpone or double cream until smooth. The glaze should be thick but still pourable.
Place the brownies on a plate or tray lined with parchment paper.
Pour the white chocolate glaze over each brownie, letting it drip down the sides for a spooky effect.
Chill in the fridge for 30 minutes, or until the glaze firms up.
Slice the grapes into rings to create the monster eyes.
In a small pan, warm a few spoonfuls of jam with a drop of water. Stir until it becomes a thick, syrup-like consistency (not runny).
Spoon two small dots of jam on top of each brownie — these will hold the eyes in place.
Press two grape rings gently into the jam, allowing some jam to ooze out for a “bloodshot” effect.
Using a toothpick, drag the excess jam outward from the eyes to create eerie, veiny lines.
Finish by placing the edible googly eyes in the centre of each grape ring.
Serve chilled or at room temperature, and enjoy your monstrously fun Halloween brownies!
