Mussel and Rainbow Chard Stir Fry

This Mussel and Rainbow Chard Stir Fry was originally an experiment using what happened to be in the fridge to put together a meal but, as so often with a quick wok creation, it was simply delicious and well received. Not only is it tasty but the colourful chard makes it looks really pretty too!

Ingredients
  

  • 200 g cooked mussels
  • 4 large spring onions
  • 3 cloves garlic
  • 1 Tbsp oil
  • 150 g rainbow chard
  • 2 tsp sesame oil
  • Marinade: 1 Tbsp light soy sauce
  • 1 Tbsp oyster sauce
  • a large pinch of sugar

Method
 

  1. Wash & drain the mussels and place in a bowl with the marinade.
  2. Peal & finely chop the garlic. Chop the white (and a bit of the green!) of the onion fairly fine. Add to the bowl and stir together.
  3. Roughly chop the chard and put aside.
  4. Heat the wok until its nice & hot then add the oil. When it starts to smoke, tip in the bowl contents including the marinade. Stir fry for a minute, then add the chard and continue stirring for a couple of minutes as it wilts.
  5. Stir in the sesame oil then serve immediately with rice or noodles.
