Cut the mutton into bite-sized pieces and marinate with the Marinade ingredients for 30 minutes.
Heat oil in a vessel and add cardamom, cloves and bay leaves and fry for 2-3 minutes. Add the chopped onions and fry till they are golden brown. (Adding salt to onion helps to cook faster).
Add ginger and garlic pastes and mix for 2-3 minutes till the raw flavors disappears.
To this add the chopped tomatoes and fry till the tomatoes are soft.
Add marinated mutton, turmeric, red chilli, cumin and coriander powders and potatoes (optional).
Cook with the cover on for about 30 minutes or till the meat is tender.
Add the chilli paste and garam masala and mix. Add 1 cup of water and cook with the lid on for another 15-20 minutes.
Remove from the stove, add ghee and coriander powder.
