Cut and clean the mutton pieces thoroughly.
Cook the mutton in a pressure cooker till soft. Allow the cooker to cool down a bit, remove the lid and transfer the mutton to a thick bottomed vessel. Cook till all the water evaporates. Keep aside.
Add oil in a pan. Add onions and fry till brown.
Add ginger garlic paste to the onions, fry for a minute.
Let it fried onions cool and blend them to a paste. Keep aside.
Fry all the spices in a pan till they become aromatic. Put them in a blender and make fine powder. Set it aside.
Heat oil in a skillet. Add curry leaves and mutton pieces. Fry for 5 minutes.
Add onion paste, spices powder, mint leaves, salt and mix well.
Cook till the oil oozes out. Transfer to serving bowl and garnish with coriander leaves. Serve hot with steamed rice.
