New potatoes with green beans and goats cheese

This new potatoes with green beans and goats cheese salad is a really nice side dish when you have a BBQ or a summer party. It's also an excellent vegetarian meal for a quick lunch or supper.  You can serve it warm or cold.

Ingredients
  

  • 500 g new potatoes
  • 100 g green beans fine
  • Half red onion
  • 4 spring onions
  • 1 tsp chopped tarragon
  • 50 g soft goats' cheese
  • Dressing:
  • ½ tsp Dijon mustard
  • 100 ml crème fraiche or sour cream, Greek yogurt
  • 3 Tbsp mayonnaise
  • ½ tsp red wine vinegar

Method
 

  1. Rub and wash the potatoes thoroughly, then cook until tender in lightly salted water. This will take 10-15 minutes, depending on their size.
  2. Slice the beans into three equal pieces, then add them to the potatoes for the last 3-4 minutes of the cooking.
  3. Meanwhile mix the dressing sauce and season with salt and pepper. Slice the onions and chop the tarragon.
  4. Drain the potatoes and green beans and put them into a serving dish. Add the onion and tarragon, then pour over the dressing.
  5. Crumble the goat's cheese on top.
  6. Serve it warm or cold.
