New potatoes with mustard and spinach

These new potatoes with mustard & spinach go really well with grilled pork chops or steak. You can pre-cook the potatoes and warm through in the spinach sauce, so this recipe is ideal for summer parties and barbecues.

Ingredients
  

  • 450 g new potatoes
  • 2 cloves of garlic
  • 1 Tbsp olive oil
  • 100 g baby spinach
  • 2 Tbsp Dijon mustard
  • Juice of ½ lemon

Method
 

  1. Put the potatoes in a pan of cold water, bring to the boil and cook for 15 minutes or until tender. Drain and rest until needed.
  2. Finely slice the garlic.
  3. Heat the oil a pan, add fry the garlic for 30 seconds, then add spinach, lemon juice and mustard. Add a drop of water or vegetable stock too.
  4. Put the lid on and cook for 3 minutes or until the spinach has wilted.
  5. Cut the potatoes in half, then add them to the spinach sauce. Season with salt and pepper.
  6. Toss gently to warm through, then serve.
