New potatoes with sausages and broad beans

We always have leftover grilled or barbecued sausages which we normally use for quick sandwiches. However, you can make other meals with them -  such as pies, salads, frittata and so on. The recipe of these new potatoes with sausages and broad beans is super easy to make -  perfect for a midweek family meal. You can use green beans if preferred.

Ingredients
  

  • 6 leftover grilled-barbecues sausages
  • 450 g new potatoes
  • Juice of ½ lemon
  • 1 tsp paprika
  • 2 Tbsp chopped parsley
  • 1 clove of garlic chopped
  • 1 bunch spring onions
  • 250 g broad beans

Method
 

  1. Cut the potatoes into bite-sized p[pieces, then put them in a pan of lightly salted water. Bring to the boil, then cook for 10-15 minutes, until tender. Drain them then keep warm in the pan.
  2. Meanwhile, thinly slice the spring onions.
  3. Heat some oil in large saucepan.
  4. Add the spring onions, garlic and broad beans. Add the paprika and stir for 30-45 seconds.
  5. Add the lemon juice and a small glass of water, turn down the heat, put a lid on and sauté for 3-5 minutes.
  6. Cut the sausages into small pieces and add them to the beans. Season with salt and pepper.
  7. Cook for 3-5 minutes to warm through the sausages, then stir in the drained potatoes and chopped parsley.
  8. Serve warm.
