No-Bake Honey Cheese Cake

This no-bake honey cottage cheese cake is a creamy, light, and visually stunning dessert that comes together in just minutes. The natural sweetness of honey, the smooth cream cheese, the crunchy biscuit base and the fresh berries create prefect harmony.  It’s ideal when you’re short on time but still want to have something homemade and delicious. This quick no-bake dessert is served in small portions, and it can easily be adapted into a healthier, low-carb, or diet-friendly version.

Ingredients
  

  • 50 g shortbread or similar biscuits gluten-free, if needed
  • 150 g low-fat cream cheese
  • 3 Tbsp single or double cream
  • 1 Tbsp sugar
  • 2 Tbsp liquid honey
  • Mixed berries for topping
  • Equipment:2 metal rings 8 cm / 3-inch diameter or a cookie cutter

Method
 

  1. Place the metal rings onto two plates.
  2. Crush the biscuits using a rolling pin until fine crumbs form. Divide the crumbs between the rings and press them down firmly with your fingers to form the base.
  3. In a bowl, mix the cream cheese with the cream, sugar and the honey until smooth and creamy.
  4. Spoon the mixture into the rings and smooth the tops.
  5. Let the cakes rest briefly.
  6. Before serving, gently warm the metal rings by holding them with both hands for a minute, then carefully lift them off the cakes. –
  7. Drizzle with extra honey and decorate with fresh berries.
