Nutty chocolate rocks

These nutty chocolate rocks are lovely, healthy snacks during the festive season. I made them with walnut, but hazelnut, pecan and almond would work too. If you use dairy-free butter and top quality chocolate - then you’ll get a vegan, glute-free and rather healthy nibbles.

Ingredients
  

  • 1 bar of good quality dark chocolate (about 200g)
  • 1 cup walnut
  • 1.5 Tbsp butter or milk-free margarine
  • 3 Tbsp desiccated coconut sugar-free
  • Icing sugar to serve, optional

Method
 

  1. Chop the nuts into small pieces and mix with the coconut.
  2. Melt the chocolate in bowl resting on top of a pan of simmering. Mix in the butter or margarin. Stir until the butter is completely melted.
  3. Take the bowl off the pan. Add the walnut-coconut mixture to the melted chocolate and mix well.
  4. Refrigerate for 10 minutes.
  5. When it’s slightly hardened, drop spoonfuls of the mixture onto a sheet or plate lined with baking paper. Chill until they firm up.
  6. Dust them with some icing sugar just before serving.
