Oat and almond pancakes with dates

These oat and almond pancakes with dates are sugar-free so perfect for those who are health-conscious. You can make them with gluten-free oats and egg replacement powder (or flax-egg) for a vegan version. Serve them with date or maple  syrup and your favourite pancake toppings. These pancakes are ideal for snacking during the day too.

Ingredients
  

  • 1 large banana mashed
  • 1 egg
  • 1 cup rolled oats
  • 1 cup almond milk
  • 1 tsp baking powder
  • ½ cup ground almond
  • cup chopped almonds
  • cup chopped dates
  • Sunflower seeds
  • Date syrup to serve

Method
 

  1. Mash the banana in bowl. Add all other ingredients and mix well. You should get a thick mixture.
  2. If time allows, rest the batter for 15 minutes - this will let the oats soften. Add more almond milk if its too dense.
  3. Stir a little oil into the batter.
  4. Oil a pancake pan or a heavy-based frying pan, then drop dollops of batter into the pan. Flatten them into circles (or use a pancake mould).
  5. Cook for a couple of minutes on each side until golden, then transfer them to a plate.
  6. Serve warm or at room temperature with date or other syrup of your choice.
