Orange and maple braised red cabbage

Christmas dinner is not complete without braised red cabbage! It can be made in advance -  even days before, so you just need to heat it up before serving. This orange and maple braised red cabbage is a boozy version – not suitable for young children!

Ingredients
  

  • 1 small head red cabbage
  • 1 red onion
  • 1 green apple
  • 1 glass of white wine
  • 1 orange zested and juiced
  • 2 Tbsps of orange liqueur
  • 2 Tbsps muscovado sugar
  • 2 Tbsps of maple syrup
  • Salt and pepper
  • 1 Bay leaf
  • Orange liqueur such as Cointreau

Method
 

  1. Shred or thinly slice the cabbage and onion, then scatter them into a saucepan. Add all other ingredients, then gently simmer for 25-30 minutes or until the cabbage has become tender.
  2. If the sauce hasn’t reduced, turn up the heat and reduce it to almost nothing.
  3. Discard the bay leaf and stir in a spoonful of more liqueur
  4. Keep it warm under a lid until you’re ready to serve.
