Orange muffins

Over the years, I have tried out many orange muffin recipes. Most were yummy, but these orange muffins are especially moist and not too sweet. They are dairy-free and can be nut-free too, if you make them with the sugar-crust topping and raisins. These muffins are perfect for afternoon tea or morning coffee break during the winter months!

Ingredients
  

  • 2 cups of flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup of sugar
  • 2 Tbsp grated orange peel
  • ⅔ cup freshly squeezed orange juice
  • ½ cup melted margarine oil or butter
  • 2 small eggs or 1 large
  • ½ cup raisins optional
  • ½ cup chopped almonds optional
  • For the toppings:
  • Almond flakes
  • or 1 Tbsp melted butter/margarine mixed with ½ tsp cinnamon and 3 Tbsp brown sugar

Method
 

  1. Preheat the oven to 175°C.
  2. Mix the dry ingredients in a large bowl.
  3. In another bowl combine the egg, oil, orange juice and zest.
  4. Combine the two bowls together and mix well. Carefully fold in the raisins and/or almonds.
  5. Transfer the batter to silicon moulds or a muffin tin lined with paper baskets.
  6. Sprinkle the almond flakes on top or brush with the sticky cinnamon sugar.
  7. Bake for about 25-30 minutes until golden brown.
  8. Cool them on a wire rack.
