Parsnip and turnip mash with roasted garlic

If you’re bored with mashed potatoes or you’re on a low-carb,food combining diet, this recipe of parsnip and turnip mash with garlic could come very handy. I made it with roasted garlic but you can use garlic paste from a jar too, if you don’t have any home-made ones. Serve it as a side dish with fish or meat - and choose a fresh herb to complement your main dish.

Ingredients
  

  • 2 medium parsnip
  • 1 medium turnip
  • ½ bulb of roasted or grilled garlic
  • 1 tbs soft butter or olive spread
  • Salt &pepper
  • 2 Tbsp chopped fresh herb of your choice dill, parsley, basil, coriander or chives

Method
 

  1. Peel the parsnip and turnip then cut them into small chunks. Put them in a pan of cold water, bring to the boil, then gently simmer for about 10 minutes.
  2. When the veggies are tender, drain and put them back into the pan.
  3. Push the garlic flesh out of it’s skin and add to the vegetables. Add butter/spread and seasoning, then mash with a potato masher until you get a coarse mixture. Add the chopped herbs and combine.
  4. Serve hot.
