Dry-fry the pine nuts until lightly toasted then set aside.
Grill, griddle or dry-fry the prosciutto ham until crispy. Transfer to a plate. When cool, break them into small pieces.
Start cooking the pasta according to the instructions on the packaging.
Whilst the pasta is cooking, heat the oil In a frying pan then add the onion and sauté until soft. Add the garlic and chilli and cook for another minute.
Meanwhile quarter the figs. Add the fig wedges to the fried onion & garlic then cook for 3 or 4 minutes. Stir through the pine nuts, chopped parsley and the crispy ham. Add a spoonful of the pasta's cooking water to moisten the mixture.
Drain the pasta and toss with the mixture in the frying pan.
Serve with plenty of ground pepper and Parmesan.
