Pasta with spiced green peas and halloumi

For a quick vegetarian lunch one of the easiest dish to create is pasta. This pasta with green peas and halloumi is ready within 15 minutes -  it’s yummy, zingy and filling.  I made it with gluten-free penne, but you can make it with your favourite pasta.  Serve it with a crispy salad on the side.

Ingredients
  

  • ½ block halloumi
  • 1 garlic clove minced
  • ½ tsp chilli flakes
  • 2 Tbsp olive oil
  • 200 g pasta of your choice
  • 100 g green peas frozen or fresh
  • For the dressing:
  • 2 Tbsp chopped mint leaves
  • 1 Tbsp extra virgin olive oil
  • Juice and grated zest of ½ lemon
  • Salt and pepper

Method
 

  1. Cook the pasta according to the packet instructions. Add the fresh peas to the cooking water for the last 3 minutes - the frozen peas for the last 5 minutes of the cooking.
  2. Meanwhile, cut the halloumi into 1.5 cm cubes.
  3. Heat the oil in a frying pan and brown the halloumi on all sides. This should take about 5 minutes. Add the chilli and garlic for the last minute of the cooking, then stir constantly.
  4. Turn off the heat, set aside.
  5. Mix the dressing.
  6. When the pasta and peas are ready, drain them and add to the halloumi, combine well. Add the dressing and toss again. Season to taste.
  7. Serve warm with plenty of freshly ground peppercorn.
