Pasta with sun-dried tomatoes

This easy pasta with sun-dried tomatoes is perfect on busy days when you don't have much time to cook. This dish is ready within 10 minutes, even less if you use gluten-free pasta. Talking of pasta, you can use any type, such as durum wheat, whole-wheat, gluten-free or fresh.The sun-dried tomatoes can behome madeor come from a shop-bought jar. Serve it with a green salad.

Ingredients
  

  • 200 g pasta
  • 6 sundried tomatoes jarred in oil
  • 1 clove of garlic
  • 1 roasted chilli pepper or ½ tsp dried chilli flakes
  • ½ lemon zested and juiced
  • 1 large handful if basil leave salt and pepper
  • To serve: grated Parmesan or mozzarella

Method
 

  1. Cook the pasta according to the pack instructions.
  2. Meanwhile put the sun-dried tomatoes, basil, garlic, lemon juice and zest in a small food processor.
  3. If you're using roasted chilli, remove the skin and the seeds and add too food processor (or add the flakes).
  4. Drizzle a drop of the oil from the jar. Whiz, until you get a coarse paste. Season to taste and add some more oil and lemon juice, if the paste is not moist enough.
  5. Drain the pasta, keep back 1Tbsp of the cooking water, add this to the paste.
  6. Toss the pasta with the paste and the cheese if used.
  7. You can serve this dish warm or at room temperature.
