Wash and soak rice in water for half an hour.
Grind the soaked rice into a coarse paste by adding half a cup of water. Keep aside.
Boil the milk in a thick and deep bottomed vessel. Reduce the heat to a medium flame and keep stirring till the milk is reduced to ¾th of its original volume.
Add sugar and adjust the amount of sugar according to your taste.
Once the sugar is dissolved add the ground rice paste to the milk. Keep stirring until the milk starts to thicken.
If you have missed the creamy consistency the Phirni will be very thick, add few table spoons of milk to get the right consistency before pouring into serving bowl.
When the pudding is ready turn off the heat. Stir it every now and then to prevent the formation of thick layer on the top.
Once the Phirni has cooled down, add cardamom powder.
Garnish the yummy desert with chopped nuts. The pudding can be served either hot or at room temperature.
