Preheat oven to 240°C.
Score the skin then rub in the oil and salt. Tuck the rosemary under the stings on the underside of the pork.
Roast in the oven for up to about 40 minutes until the skin starts to blister.
Turn down the oven to about 170°C and let cook for an hour.
Put the joint on a carving plate and cover loosely with foil for about 15 minutes while you make the apple sauce.
Apple Sauce: Peel, core and slice the apples thickly.
Put in a small saucepan covered with the water and bring to the boil stirring constantly.
Simmer under the lid for 5 minutes then for another 5 uncovered.
Turn off the heat then stir in the cinnamon & sugar.
