Place the lime slices in a shallow baking dish, then put the spare ribs on top.
In a bowl, mix all other ingredients, except the coriander leaves, then pour this mixture over the ribs, coating them well. Cover the dish with foil, then marinate for at least 2 hours or even overnight.
Preheat the oven to 160°C. Put the dish in the middle of the oven (covered) and bake for about 2 hours. Turn over the ribs at least once.
Take off the foil, turn the oven to the grill setting and brown the pork on each side - this should take about 15 minutes.
Serve the ribs with rice and the sauce (strained). Scatter the coriander leaves on top.
