Porridge with caramelized grapefruit

Porridge is probably the healthiest breakfast but eating it plain can be boring day after day. So why don’t you jazz it up with fruits, nuts or a simple compote? This porridge with caramelized grapefruit takes no longer than making the porridge itself - while the porridge is cooking and resting you can make the compote.

Ingredients
  

  • 50 g rolled porridge oats gluten-free, if needed
  • 350 ml fresh milk or plant-based milk
  • 1 pink grapefruit
  • 1 knob of nutter or dairy-free alternative
  • 2 Tbsp muscovado sugar
  • 1 tsp cinnamon
  • 1 handful nuts of your choice optional
  • 2 Tbsp maple or agave syrup to serve

Method
 

  1. Put the porridge, half of the cinnamon and milk in a saucepan. Bring to a simmer and cook for 10 minutes over low heat. It should be creamy, so add a little more milk, if needed.
  2. Turn off the heat, stir a bit, then put a lid on and rest for 5 minutes.
  3. Meanwhile, peel the grapefruit, and remove the membrane.
  4. Heat the butter in another pan, add the grapefruit flesh, as wedges or torn into pieces, then add the sugar and cinnamon. Caramelize for a few minutes, until sticky.
  5. Spoon the porridge into bowls add the caramelized grapefruit and some nuts, if used. Drizzle with agave/maple syrup and serve.
