Pat-dry the steaks with paper kitchen towel then put them in a shallow dish.
Mix all the other ingredients in a bowl and pour this over the steaks. Make sure they are well coated on both sides. Marinate in the fridge (covered) for up to 8 hours, turning them occasionally.
Remove the steak from the fridge an hour before cooking. Pour the marinade into a small saucepan, bring marinade to a boil, then season to taste and cook until reduced to a thick sauce. Set aside.
Heat your BBQ, grill or griddle pan.
Coat the grill rack or pan with a little oil. Season the steak with salt and pepper. When the rack/pan is hot place the steak on it and after 30 second turn it over. Keep turning it every minute until it’s cooked to your liking. (2-5 minutes on each side).
Let the steak rest for 5 minutes (under cover). Add the meat juices to the sauce, warm it up, whilst cutting the steak diagonally into thin slices.
Serve with the hot sauce.
