Port Marinated Steaks

These port Marinated Steaks are absolutely delicious and perfect for parties, dinner-parties or special occasions! Although  it’s quick and easy to cook you should marinate the beef for at least an hour -  if it’s not matured then even longer. Serve it on a bed of green salad or in a flat bread.

Ingredients
  

  • 2 sirloin steaks
  • 4 Tbsp red port
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp balsamic vinegar
  • 1 clove of garlic minced
  • 3 sprigs of fresh thyme leaves only

Method
 

  1. Pat-dry the steaks with paper kitchen towel then put them in a shallow dish.
  2. Mix all the other ingredients in a bowl and pour this over the steaks. Make sure they are well coated on both sides. Marinate in the fridge (covered) for up to 8 hours, turning them occasionally.
  3. Remove the steak from the fridge an hour before cooking. Pour the marinade into a small saucepan, bring marinade to a boil, then season to taste and cook until reduced to a thick sauce. Set aside.
  4. Heat your BBQ, grill or griddle pan.
  5. Coat the grill rack or pan with a little oil. Season the steak with salt and pepper. When the rack/pan is hot place the steak on it and after 30 second turn it over. Keep turning it every minute until it’s cooked to your liking. (2-5 minutes on each side).
  6. Let the steak rest for 5 minutes (under cover). Add the meat juices to the sauce, warm it up, whilst cutting the steak diagonally into thin slices.
  7. Serve with the hot sauce.
