Potato and Cabbage Soup

This Potato and Cabbage Soup also has Leek, Carrot, Onion and Garlic - but they wouldn't all fit in the title. The main thing is that it's quick, easy, healthy, warming and tasty! Just the thing for supper on a chilly evening with some chunky fresh bread. I make it using the pressure cooker; a normal pan will take about 25 minutes longer and need about 250 ml more water.

Ingredients
  

  • 1 Tbsp Olive oil
  • 150 g Leeks
  • 200 g Onions
  • 6 g Garlic
  • 350 g Potatoes
  • 300 g Cabbage e.g. Savoy
  • 250 g Carrots
  • tsp mixed herbs
  • litre chicken stock

Method
 

  1. Heat the olive oil in the pan. Thinly slice the leek and onion, crush & slice the garlic and add to the pan.
  2. Thinly slice all the other vegetables and stir into the softened mixture in the pan.
  3. Add the herbs, stir then pour in the stock.
  4. Put on the lid and bring up to pressure. Cook on a low flame for 10 minutes then allow to cool by itself.
