Prawns and red pepper stir-fry

A stir-fry is quick and easy meal for a midweek supper and it's quite healthy too! This prawn and red pepper stir-fry is ready in just ten minutes! Serve it with noodles or rice.

Ingredients
  

  • 1 courgette
  • 2 spring onions
  • 1 red bell pepper
  • 1 yellow bellpper
  • 1 inch ginger grated
  • 2 garlic cloves grated
  • 1 chilli
  • 1 tbps soy sauce
  • 150 g raw prawns shelled
  • 1 Tbsp groundnut oil
  • 1 toasted sesame oil
  • 1 lime
  • sesame seed to serve

Method
 

  1. Using a spiralizer or julienne peeler cut the courgette into noodle shapes and set aside.
  2. Cut the pepper into small pieces and slice the spring onions diagonally.
  3. Grate the ginger and garlic.
  4. Heat a wok. When it's piping hot, add the groundnut oil and stir-fry the spring onion for about 30 second. Add the pepper and stir for 2 minutes, then add the ginger, chilli and garlic.
  5. Stir fry for a couple of minutes, until the peppers are tender then fold in the courgette and prawns and cook for 3 minutes until they are just cooked through.
  6. Serve immediately with the fresh lime juice and some sesame seeds sprinkled on top.
