Prawns and spinach spaghetti

On busy days I like making simple pasta dishes as they can be ready within 15 minutes. This prawns and spinach spaghetti is a good example - it ticks all the boxes: quick and easy to make, healthy, delicious and filling. It's dairy-free and can be gluten-free too if rice or corn pasta is used. Serve it with some grated Parmesan if you like!

Ingredients
  

  • 200 g spaghetti
  • 1 Tbsp olive oil
  • 250 g cherry tomatoes
  • 150 g tiger prawns shelled
  • 2 garlic cloves
  • 1 mild red chilli deseeded
  • 1 roasted pepper from jar or home-made
  • 100 g baby spinach leaves
  • 1 handful fresh basil leaves chopped
  • 1 Tbsp good quality balsamic vinegar

Method
 

  1. Cook the pasta according to the pack instructions then drain. Put it back in the pan and keep warm under cover.
  2. Meanwhile, heat the oil a frying pan. Add tomatoes and cook for 2 minutes. Slice the roasted pepper & garlic, chop the chilli. Add these to the tomatoes together with the prawns. Stir for a couple of minutes, until the prawns are just turning pink.
  3. Stir in the spinach, basil, vinegar, cover and turn off the heat after 30 seconds. Let it steam for a minute or so then stir through the pasta.
  4. Season with salt and pepper then serve immediately.
