Prawns, red pepper and spinach stir-fry

If you're after a pretty simple yet tasty dish for supper or lunch, this prawns, spinach and pepper stir-fry will be an excellent choice! It's ready within ten minutes -  then serve it with Jasmine rice or noodles.

Ingredients
  

  • 1 Tbsp groundnut or sunflower oil
  • 1 garlic clove
  • 2 cm piece of ginger
  • 1 small red pepper
  • 1 chilli optional
  • 150 g pack raw peeled king prawns
  • 1 Tbsp soy sauce
  • 1 tsp Thai fish sauce
  • 2 large handfuls of baby spinach leaves
  • To serve: lime juice

Method
 

  1. Finely slice the garlic and ginger. If used, deseed the chilli, then finely chop it.
  2. Finely slice the red pepper.
  3. Heat a wok until it's really hot. Add the oil, and a few seconds later, the garlic, ginger and chilli.. Stir-fry for 30 seconds, then add the pepper and stir-dry for 2 minutes.
  4. Add the prawns, stir-dry for 2-3 minutes until they change colour. Add the soy or fish sauce.
  5. Stir in the in the spinach, stir-fry for a minute or so until the spinach starts to wilt.
  6. Serve immediately.
