Ingredients

  • 50 g soft butter or dairy-free margarine
  • 50 g soft unrefined cane sugar
  • 2 tsp ground cinnamon
  • 50 g raisins optional
  • 1 egg beaten (perhaps mixed with 2 Tbsp milk )
  • 1 pack of ready-rolled puff pastry
  • extra sugar

Method

  1. Cream the butter, sugar and cinnamon together.
  2. Roll out the puff pastry (on its packaging sheet) and spread the butter-cream evenly on top. Sprinkle with the raisins.
  3. Roll up the pastry along its long side. If you have time, cover the roll tightly with cling-film and chill for 15 minutes.
  4. Preheat the oven to 200°C.
  5. When the sausage-roll is solid, cut it up into 1.5 cm slices using a sharp knife. Place these on a lined or greased baking sheet allowing plenty of space between them (they will double in size).
  6. Brush the top with the egg-wash and sprinkle with a little sugar. Bake for 15 minutes until golden and transfer them onto a wire rack to cool.
