Raspberry and almond oat bars

These healthy raspberry and almond oat bars are vegan, gluten-free and sugar-free. They are sweet enough thanks to the bananas, vanilla, and raspberries. I added some spices to the mixture, but you don’t have to if you don’t like ginger or cinnamon. These oatbars are perfect for breakfast and snacking during the day.

Ingredients
  

  • 2 large or 3 small ripe bananas
  • 2 Tbsp almond butter or vegetable oil
  • 1 cup rolled oats gluten-free, if needed
  • 1 tsp vanilla essence
  • ½ cup almond flakes
  • ½ tsp ground ginger optional
  • ½ tsp cinnamon optional
  • 1 Tbsp dried raspberries optional
  • 1 cup raspberries

Method
 

  1. Preheat the oven to 180°C. Grease and line a shallow, about 20x30 cm, baking dish.
  2. Using a fork, mash the bananas, then mix in the oil, vanilla essence and almond butter or oil.
  3. Add the oats and spices (if used) and combine well.
  4. Add the raspberries and mix well, then fold in the dried raspberries and almond flakes.
  5. Transfer the mixture to the prepared dish, spreading it out evenly.
  6. Bake for 20-25 minutes until golden.
  7. Let it cool, then cut it up into slices or squares.
