Red lentil soup with bacon

This simple red lentil soup with bacon can be made within half an hour, it requires very little preparation. Perfect soup on a cold day - also it's ideal on New Years Day, when  we're supposed to eat pork & lentils to be lucky for the rest of the year. Serve with crusty bread and you'll have a hearty meal!

Ingredients
  

  • 1 tsp oil
  • 1 red onion
  • 3 slices of smoked bacon
  • 1 tsp thyme leaves
  • 150 g red lentils
  • 1 litre chicken stock or soup
  • To serve: ground pepper grated cheese, sour cream (optional)

Method
 

  1. Peel & finely chop the onion. Cut the bacon into small cubes.
  2. Heat the oil in a saucepan, add the onion and bacon. Cook for about 5 minutes, until the bacon becomes crispy and the onions are soft. Add the thyme leaves and lentils.
  3. Pour in the stock, bring to the boil and simmer on low heat for 20-25 minutes.
  4. Serve with ground pepper and/or with grated cheese & sour cream if you like.
