Red onion and radish chutney

This red onion and radish chutney goes extremely well with strong cheeses such Roquefort or Stilton. Also, it can be served as a condiment with cold meat or  grilled steak. You can use it as a  sandwich/pita/burger filling too or as a topping on fritters and nibbles. So it's versatile and incredibly easy to make!

Ingredients
  

  • 1 Tbsp olive oil
  • 1 small red onion
  • 100 g radish
  • 1 Tbsp clear honey
  • 1 tsp brown sugar
  • 2 Tbsp white wine vinegar
  • 1 pinch of salt
  • 2 cloves of garlic

Method
 

  1. Finely slice the onion and garlic. Chop the radish into small cubes.
  2. Heat the oil in a frying pan and gently soften the onion for a few minutes. Add the garlic and the radish, cook under a lid for a couple of minutes.
  3. Add the remaining ingredients, cover with the lid and cook for 8-10 minutes until the vegetables are tender and sticky.
  4. Serve it warm with grilled lamb/beef steak - or let it cool and serve with cheese/cold meats.
