Rizi-bizi

Rizi-bizi is a very popular Eastern-European side dish, particularly loved by children. It's a cross between the Italian Risi e Bisi and pea risotto. While the risotto is usually eaten as a first or main course,  Rizi-bizi is a side dish served with fried meat, meat-balls or stew. This Hungarian version is very easy to make, in fact it's an ideal way to use up leftover cooked rice.

Ingredients
  

  • 1 cup rice or 200g
  • 200 g green peas
  • 50 g butter or dairy free margarine
  • 2-3 Tbsp chopped parsley
  • Salt and pepper
  • 1 small onion optional
  • Grated cheese optional

Method
 

  1. Cook the rice according to the instructions on the packaging or follow our cooking method.
  2. Sauté the peas in the butter for 2-3 minutes (under cover), then add the chopped parsley and simmer for a couple of minutes more. Season to taste. Stir in the rice.
  3. Serve hot with your main course.
