Roast beef with horseradish

This roast beef has a horseradish crust and is served with a zingy horseradish sauce together with the onions it's cooked on. It's really delicious and easy to make -  perfect for a Roast Dinner or Sunday lunch, particularly if you have friends or family over.

Ingredients
  

  • 1 kg of beef joint
  • 3 onions
  • 50 g butter/margarine
  • 1 Tbsp black peppercorn
  • 2 Tbsp grated horseradish
  • 1 Tbsp thyme leaves
  • 1 kg of beef joint
  • 1 Tbsp corn flour
  • 2 Tbsp olive oil
  • Horseradish sauce:
  • 2 Tbsp grated horseradish
  • 1 Tbsp crushed black pepper
  • 100 ml Greek yogurt or crème fraîche

Method
 

  1. Preheat the oven to 200 ° C.
  2. Peel the onions and cut each into 6 wedges. Grease a roasting tin and lay the onion wedges on the base.
  3. Put the butter, horseradish, pepper and thyme into a blender and whiz until you get a smooth paste.
  4. Spread the paste on the top and sides of the beef, then place it on top of the onion. Sprinkle with the corn flour and drizzle the oil over the beef and the onion.
  5. Roast for 45-90 minutes, depending how well done you like your beef.
  6. While the meat is roasting make the horseradish sauce - just combine the ingredients and put aside.
  7. Rest the beef for 15 minute before you slice it.
  8. Serve with the horseradish sauce and the roasted onions.
