Roasted artichoke and red pepper pasta

Vegetarian or vegan pasta dishes are really easy make and can be very healthy if you use wholesome pasta. I tend to use brown rice pasta, which is gluten-free, low-GI, and doesn’t taste of maze. This roasted artichoke and red pepper pasta dish is perfect on those days when you don’t have much time to cook or fresh veggies in the larder so have to rely on jarred/ pre-cooked ingredients. I always have pesto (normal and vegan) and roasted/grilled peppers, artichokes and olives in jars in my fridge so I created this easy, tasty and healthy dish! Best served with a crispy salad!

Ingredients
  

  • 200 g pasta of your choice can be gluten-free
  • 1 roasted red pepper from jar or home-made
  • 75 g roasted artichokes from jar or home-made
  • 2 Tbsp vegan or not pesto
  • 3 Tbsp olives from jar
  • 2 Tbsp chopped basil leaves
  • Juice and grated zest of ½ lemon
  • Ground pepper

Method
 

  1. Cook the pasta according to the packet instructions.
  2. Meanwhile, thinly slice the roasted pepper and artichokes. Mix the pesto with the lemon juice and zest in a large mixing bowl.
  3. When the pasta is al dente, drain, then add to the pesto mixture and toss well. Fold in the chopped artichokes and red peppers, then the olives and basil leaves.
  4. Serve with ground pepper and garnish with basil leaves. (You can scatter some grated Parmesan or vegan cheese on top, if liked).
