Roasted red pepper spread with walnuts

This middle-eastern inspired roasted red pepper spread with walnuts is a very versatile dish - it can be used as a sandwich filling; a pizza or pasta sauce; a dip with crudités or to spread on party nibbles and appetizers. It can be whizzed up in just 5 minutes. I keep a jarful in the fridge for "emergency" use.

Ingredients
  

  • 100 g roasted red pepper
  • 50 g walnuts
  • 2 tsp red wine vinegar
  • ½ tsp ground cumin
  • ¼ tsp sweet paprika
  • ¼ tsp cayenne pepper
  • 1 Tbsp tomato purée
  • 1 clove of garlic
  • 1 tsp olive oil

Method
 

  1. Dry-fry the walnuts in a frying pan until fragrant, then let them cool.
  2. Put all ingredients into a blender and whizz until you get a thick, textured paste. Taste and season with salt and pepper.
  3. Chill until needed.
