Rocket (or aragula) is a nutty leafy green, perfect for quick salads. This rocket and tomato salad is ready in just a few minutes -  an ideal side dish for pastas and pizzas, barbecued meat& fish or roast meats.

Ingredients
  

  • 2 large handful of wild rocket leaves
  • 1 handful cherry tomatoes ripe
  • 1 Tbsp pine nuts
  • 1 Tbsp extra virgin olive oil
  • ½ Tbsp rice vinegar
  • 2 Tbsp grated Parmesan cheese
  • Salt & pepper

Method
 

  1. Cut the tomatoes in half.
  2. Dry-fry the pine nuts.
  3. Scatter the rocket in a large bowl. Add the tomatoes, pine nuts, then the oil, vinegar and parmesan. Toss well. Season with salt and ground pepper to your taste.
